St Patty's Day Dinner


I was excited to find this amazing tasting menu in one of my journal books. Just in time!

Simple and very Irish in ingredients, these dishes are quintessential Irish fare.

Imagine the Cliffs of Moor or the downtown Dublin Pubs. Pour yourself a pint and enjoy!

The potato, chive soup takes the chill out of the air and is so very delicious. The recipe comes from either Bon Appetit February 1997, or Gourmet, February 1997. A keeper.

Make it easy and buy the hors d’oeuvres and even the dessert. 

The hors d'oeuvres were smoked salmon pate, Blarney cheese and assorted crackers. Lots of pretty Spring flowers. On the table were Purple Lisianthus, Purple Loosestrife and Pink and White Stock all in individual bud vases. The vases sat in abox covered in white birch bark. The napkins were a diaphanous purple organdy.
We started with a champagne toast to our daughter, Paisley, who was celebrating a new job.

My first course was a yummy potato and chive soup, made with red new potatoes or you could use Yukon gold potatoes. They are cooked in chicken broth, seasoned with salt and pepper. Puree the potatoes with garlic adding the broth for the desired consistency. Put the mixture back into the pot and add heavy cream. Simmer till smooth and creamy. Add 1/2 cup chopped chives. Serve with a dollop of sour cream.

On the table, condiments of two types of mustard. One grainy, one Dijon and horseradish. 



The Corned Beef with turnips, potatoes, cabbage and dumplings were served buffet style. The table was draped with a tea cup linen table-square.
A basket of Irish Soda Bread and butter to go with the meal. 
My Corned Beef recipe was from James Beard. The Cabbage recipe from Lee Bailey and the Irish Whiskey Carrots from Gourmet March 1988.

Dessert: A Trifle, bought at the local French bakery, Versailles and the Toll House Cookies from a Time Life Cookbook.

A LONG ANTICIPATED DINNER INVITATION


This post and my next post will be called  "Dining Out ".


Recently we were invited to a long awaited dinner. Just my husband, myself and our son, who is a dear friend  of our hostess and fellow dog walker. The bond between them, and their Great white Pyrenees. Her Great Pyrenees Buddy is friends with our Luna and Anker.

Our hostess, who loves to entertain had heard about me from my son, the fellow dog walker. My love of entertaining sparked her interest. We met, we talked and shared menus. She even went online to order an issue of Bon Appetit magazine in which I was featured with 14 pages for my Venetian Halloween. To say she worked very hard in prepping for this dinner is an understatement. Believe it or not her goal for the evening was to impress me, soliciting an A+ score for the dinner. I felt like I was on one of those reality food shows, where I was the  judge of honor.

I was overcome with humility. It was not hard to love what she cooked that evening. She even brought out all of her recipe books, magazines and notebooks.

Not only did she serve two homemade desserts, but she made a third dessert just for me.  I was totally surprised and flattered. She had read an article about me that talked of how I was not a dessert eater but would order a dish of clams on the half shell for dessert whenever we would go out to dinner.

Here is her incredible and delicious menu:

Before Dinner Appetizers

Eggs Mimosa with Tuna Filling
Mussels on the Half-Shell with Pesto
Crostini with Garlic Pea Puree and Roasted Asparagus and Sesame Seeds

Second Course:
Sweet Potato Soup with Orange Creme Fraiche

Third Course:
Scallop, Spinach, Almond, and Orange Salad

Fouth Course: Entree
Fillet of Beef with Merlot Sauce
Creamed Spinach with Piped Potatoes Au Gratin Rosettes
Carrot Puree with Ginger and Orange

Fifth Course: Dessert
Carmalized Raspberry Rice Pudding
Lemon Merilngue Pie
Clams on the half-shell, just for me!
